Fresh Greek Inspired Summer Salad
I used to make this ALL of the time when we lived in Boston and then honestly forgot about it for literally 3 years. I was looking through some pictures the other day and found a picture of this Fresh Greek-ish Inspired Summer Salad and immediately placed a Walmart delivery order for the items that we didn’t have on hand. I used to make it for lunch a lot but we also had it as a side when we would grill out! I know this says summer in the title but honestly it can be made year round and is such an easy way to get a lot of veggies all at once! Plus I couldn’t get enough feta in my life if I tried! I will write out what I do to make it below but it is such an easy ‘recipe’ it feels silly! It’s just a little bit of chopping and then mixing it all together to get this delicious refreshing crunchy “salad” to add to any meal!
Fresh salad INGREDIENTS
Diced Red Onion
Diced Cucumbers
Diced Grape or Cherry Tomatoes
Greek or Italian Dressing
Feta Cheese
Oregano to Taste
Salt and Pepper to Taste
INstructions
There really isn’t much to do besides chop everything up and then add the dressing and seasonings! I can’t even add more to it! The seasonings are just measured to taste! Also, If you like cucumber more than tomatoes, add more cucumber! All of the ingredients are up to you and what you like and then I would also add that in my opinion, the longer that it sits and marinates the better it tastes!
Anyways! I don’t always feel like a real adult but when I decided to make myself a bowl of veggies I get to at least pretend while I having lunch! This fresh Greek inspired summer salad is not only a delicious and healthy meal option, but it also reminds me of all of the vibrant flavors and ingredients that we had while we were in Greece. I love the crisp cucumbers and juicy tomatoes paired with the tangy feta cheese and bold oregano, it is the perfect balance of flavors and textures. Not to mention, it is incredibly easy to make and can be customized to suit your taste preferences. I absolutely recommend giving this summer salad a try!
