Easy Gluten Free Crockpot Chili

Hi friends! 🍂 If you know me, you know that I’m pretty much on a steady chili diet from the moment the first fall leaf hits the ground until at least Valentine’s Day. I like to make a big batch in the crockpot every Sunday or every other Sunday and then eat it for lunch all week long! I love that it’s cozy, fills me up and somehow I never really get tired of it. Even if you are looking for dinner recipes for your family for an easy weeknight dinner recipe, this gluten free crockpot chili is one of those perfect “set it and forget it” meals! So many good occasions for making it, busy weeks, football Sunday’s, or when you just need something comforting to eat that can simmer away in the kitchen while you’re doing ANYTHING else!


Ingredients

You can easily customize this based on what you have in your pantry or fridge, this is a super forgiving recipe but here is what I use!

Here’s what you’ll need:

  • 1 lb cooked ground turkey, beef, or veggie crumbles (all three work great and I will use whatever I have on hand)

  • ½ of a diced white onion

  • Diced mushrooms (add as much or as little as you like)

  • 1 can (29 oz) tomato sauce

  • 1 can (15.25 oz) black beans, drained

  • 1 can (15.25 oz) kidney beans, drained

  • 1 can drained corn

  • 1 can (16 oz) chili beans

  • 1 can (10 oz) mild Rotel

  • Seasonings to taste: garlic salt, onion powder, salt, pepper, paprika, cayenne pepper!

  • Shredded cheddar cheese

  • Sour cream

  • Fritos for dipping!


INSTRUCTIONS

  1. In a skillet cook the meat, I add salt and pepper and minced garlic for seasoning.

  2. Then add in half of a diced white onion and diced mushrooms!

  3. While the meat is cooking drain and rinse the can of kidney beans, black beans, and corn.

  4. Once the meat and veggies are cooked down, add everything else to the crockpot!

  5. Add the seasonings to the crockpot and then cook on low for 8 hours or high for 4 hours.

  6. Serve with Fritos and cheddar cheese!
